Avocado Brownies

1 ripe avocado about 200 grams
2 eggs
2 tsp vanilla
1 tbsp water
1×100 g/3.5 oz bar of chocolate
1 cup + 1 tbsp cocoa powder
1/2 cup sugar
1/2 tsp baking soda
Pinch of salt

-oven to 355/180, butter 8″pan
-purée avocado with eggs vanilla and water until smooth
-melt chocolate and mix in
-add cocoa, sugar, baking soda and salt and mix
-if too thick, add tbsp of water
-spread into dish and cook for 20-25 minutes
-leave to cool before taking out of the pan, cool in fridge
